If the words “sour beer” are not ones you’ve heard yourself say while ordering in a bar or restaurant, then Cascade Brewing needs to be moved to the top of your pub crawl list. The brewing of sour beer is an old-world technique that has been alive in Europe since the mid 1800’s, however the brewing of sour beer in the US is a relatively new undertaking. Here in the Portland, Cascade Brewing is a pioneer of the northwest style sour beer movement, and the way they pair food with sour beer is as much a culinary art form as any other food/libation pairing. The endless flavor profiles, character, and depth of sour beers make them a fine a choice for pairing with food. They provide sharp, focused acidity, with good body and mouth feel. They are a balance of sweet and fruity with a light tartness. Cascade Brewing features more than 18 rotating taps, with a predominantly sour lineup at any given time, as well as a food menu with recommended beer pairings. While not extensive, the food items are executed well and absolute magic when paired with the sour beers. And don’t miss Tap It Tuesday, when at 6:00PM they tap something new, experimental, or a favorite from the cellar, which has the potential to provide a once-in-a-lifetime beer experience. 4 Stars on Yelp. $$
