The brewing of sour beer is an old-world technique that has been alive in Europe since the mid 1800’s, however the brewing of sour beer in the US is a relatively new undertaking. Here in the Portland, Cascade Brewing is a pioneer of the northwest style sour beer movement, and the way they pair food with sour beer is as much a culinary art form as any other food/libation pairing. The endless flavor profiles, character, and depth of sour beers make them a fine a choice for pairing with food. They provide sharp, focused acidity, with good body and mouth feel. They are a balance of sweet and fruity with a light tartness. Cascade Brewing features more than 18 rotating taps, with a predominantly sour lineup at any given time, as well as a food menu with recommended beer pairings. While not extensive, the food items are executed well and absolute magic when paired with the sour beers.
